I was born into a French Canadian family and started tasting wine early with food. My love of wine and food goes hand in hand, when you have a perfect pairing, it is one of those great pleasures in life.
I have recently returned to Ontario, after living in Victoria, BC for the last four years. I worked part-time for the Mark Anthony Group which allowed me to attend many industry tastings, including numerous Import Vintners and Spirits Association tastings.
Before moving to Victoria, in December of 2006, I graduated with a Sommelier Certification from Algonquin College in Ottawa.
What I look for in a wine, above all, is aromatics. The nose should draw you in, not to much alcohol with good acidity, rich and concentrated flavour. For me, great wines are about subtlety, complexity and finesse. A bottle of wine should tell a story, should have a sense of place, terroir, where the grapes where grown. The use of oak should be handled with care.
I love everything about wine and recognize I have a great deal to learn. I enjoyed a great deal of BC wines and I am eager to get more familiar with Ontario wines.

This cool climate shiraz made with low yielding vines and opened up with aromas of black fruit, tar, saddle leather, black pepper, dried herb de Provence and black pepper notes. On the mouthfeel, full bodied, dry, layered dark fruit and smoky flavours, balance acidity and fine structured tannins. A great length on the finish, with concentrated and robust flavours. This Shiraz is built for the long haul, I would say 4-5 years for the texture to soften up and all elements of this Shiraz to fully integrate. Excellent addition to any cellar.

A beautiful sophisticated nose here with aromas of blackberry, black currant, sour cherry, dried herbs, cedar and toasty notes. On the mouthfeel, medium to full bodied, loads of flavour with fine acidity and gritty tannins. Very good length on the finish with savoury and rich concentrated flavours, fine texture and persistent grainy tannins. If you are lucky enough to still hold this superb wine on your cellar, it is drinking well with a great deal of life left. I would say peak drinking window here is 2014-2016. A fantastic wine and great value

Shafer included 15% Cabernet Sauvignon to this Merlot which makes this wine a very elegant, finely textured, fruit driven and very aromatic with aromas of ripe dark plum, blackberry, chocolate, vanilla and cedar forest. On the palate this full body Merlot (with alcohol coming in at 14.9%) achieves an excellent balance with surprisingly fresh acidity for a Napa wine, loads of flavours and fined grained tannins which makes the alcohol only slightly noticeable. The finish is long with rich and savoury flavours and all wrapped up in fine ripe tannins. A robust Merlot, yet approachable.

Very aromatic; fruit cake, dark plums, date and cinnamon. Full bodied, silky tannins with every component well integrated. Nice to see a mature Australian Shiraz on the LCBO shelf. Will try to locate a few more bottles of this. Tasted December 2010.

The nose is so sensuous with aromas of blueberry, plum, cassis, Asian spice, vanilla and toasty notes. Full bodied with the alcohol coming in at 15.5%, but it is well integrated with complex flavours of dark fruit, tobacco and spices, balanced acidity and velvet tannins. What you get from this Shiraz is a big wine with lots of flavour, creamy, very smooth and above all, awesome aromatics. Could smell this all night, great wine here
