Highly aromatic with lovely, clean orange citrus, peach, mineral, and beeswax aromas. The palate is crunchy with bright acids. Flavours are a touch off-dry with nicely balanced aroma replays. Grapefruit notes arrive on the mid-palate and continue through to the long minerally finish, with excellent length. Tasted Feb/2019.

Cave Spring Cellars have six different Riesling wines. This is the 2016 vintage of their reserve Riesling, made from their oldest low yielding vines at 40 years old. This winery is in the Beamsville Bench area of the Niagara Peninsula overlooking Lake Ontario. Intense lemon aromas, grapefruit, Belgian waffle. The finish is long, of lemon rind and salty minerality. Ar 7 g/l of sugar, this is a dry wine with no perceived sweetness There's a touch of astringency from tannin, possibly due to some grape stems and seeds incorporated into the fermentation. Mouth-watering acidity, 12% alcohol.
