Pair with red meats - medium rare, four year old cheddar and crusty baguette, rich beef stew, leg of lamb, Larry's review: great drinking wine, lots of cherry, black berry, soft pepper and spice on the finish. Good structured tannins close softly.

96% Clone 1 and Clone 100 Shiraz. 4% Viognier. Fruit was harvested Oct 9th from our Queenston Rd Vineyard in St. David's Bench. The Syrah grapes were left to cold soak on the skins for 2 days and were then crushed to one Tonne bins. The Viognier was lightly pressed before adding their juicy skins to the Syrah. The mix was fermented in one tonne bins. Malolactic fermentation took place in barrels where the wine aged for 19 mos. After much tasting and deliberation, the fanl blend of 75% French Oak and 25% American oak was created - all older barrels (neutral wood). Bottled Aug 16th 2012.
